leftover Taiwanese noodles and baby Bok Choy

I just had those left over food from 2 days ago- for lunch. The best of this in Clear Lake is found at 888 on El Camino Real. As I tasted the noodles, I am transported back to the days I was a child growing up in my parents home. These are called Taiwanese noodles here but they are just stirred fried noodle that has all kinds of vegetables and shrimp, pork, chicken and eggs. Back at home we called it a meal in one same plate. My father loved to cook. He would make this noodle dish on some Saturdays for lunch. This may be one dish meal but it took him so much time to prepare for it. Washing, slicing, chopping, boiling, peeling and you know the cooking it self. Mother was his helper in the kitchen. No one else was allowed in the kitchen. You hear laughter, and their conversation coming out of the kitchen. It was their time alone without us- the children. Dad would make soup to go with the noodle dish. At about 12:00 we were called to come and eat, then to go away to play again. What memory this so called "Taiwanese Noodle dish" brings me each time I eat it. Thanks be to God for the gift called "MEMORY".
