Chicken, Saucage and Shrimp Gumbo
I made this yesterday. It had chicken, sausage, shrimp, carrots, celery, tomatoes, onion, bell peppers, flour, oil and seasoning. It takes about 2 hours to make a pot of this soup-like-a-meal. As I was making this I thought of my life in Houston TX and friends I met there. In fact this recipe was from one of Will and my new friends, Dr. Mike Morris, who is a dentist so of course he is a very patient person. Making this Gumbo requires a bit of patience and waiting. While I am impatient, I do make this from time to time to remind myself that patience is a good thing to practice in life. It does help that every one in my family loves to eat it.

Stir fried Carrots and Bok choy
Ingredients:
Bok Choy - 5 cups or so washed and cut up
Carrotts - 1 cup slice
Onion - half a small onion cut in big pieces like 1"
Oil- 1 teaspoon
Salt to taste
Oyster Sauce- 2 table spoon
Instruction with pictures
1. Wash Bok Choy and cut them in 1.5 inches. Drain them in colander.
2. Put oil, onion and carrots in 12" frying pan.
3. Cook them stirring occasionally till they look like the picture below. I cook on hi heat.
4. Add Bok Choy and close lid of pan immediately. Pour 1/2 cup water if you wish.
5. Open lid and Stir till they look like in the picture below. Approximately 5-7 minutes. Add Oyster sauce. Stir to mix it all up.
6. Serve immediately. This dish does not tease good cold or leftover. It tastes really good if you pour it over steamed Jasmine rice and eat it strait away.

I cooked Apples
Yap. I cooked apples. There was a bag of small Gala Apples that I bought a week or so ago. I forgot all about them and bought another bag. So, I decided to cook the older ones. One of my smarter choices in the kitchen. I am so proud of my self that I am going share how I did it here on my blog,
Step 1. Wash small Gala Apples in cold water.
.
Step 2. Cut each apple in 6 pieces discarding the core and seeds. Put them in a sauce pan with 1/2 cup cold water. Bring them to a boil till you see bubbles at the bottom of the pot. Close lid. Turn heat down to medium.
