Joshua is on a roll

I know this is very silly but I also know those who are personal friends of ours would enjoy this entry. This evening Joshua wanted to learn how to make the whole dinner with red egg being the main dish. So, he did. The success of his Broiled Salmon may have been the inspiration. Here is the dinner menu: Red Eggs traditional "Buti Hinchho" which means sweet soup. White rice. Condiments: hot mango pickles- store bought bala chhaung- fried red peppers and onions, garlic and ginger-Lt made this. The Red Egg dish has been one of Joshua's favorite dishes since he was a little boy. The ingridients are - lots of sliced onions, sliced roma tomatoes, canola oil, and lot of eggs and salt to taste. It is a slow cooking dish and it takes a long time to cook it. The soup is a typical of Myanmar dish. The ingridients are young Gouard, onions, garlic, dried small shrimp, tomatoes, clear noodles, fish sauce and lots of water. This too is a test of patience. As we stood side by side in the kitchen - Joshua slicing, chopping, peeling, frying, cooking and my instructing, I came to realize that I have become my father. Back then he was me and I was Joshua, side by side we father instructed and I did the action. It was so very much fun. I remember how proud he was of me and how proud I was to see my family eat what I had cooked. Now I know how happy he felt when I wanted him to teach me how to cook. The whole meal Joshua cooked this evening was delicious. Needless to say that I am proud of him. History does repeat it self- delightfully so ( some times). I silently and gratefully say "Thank you Lord for giving me my father." I wonder what Joshua will like to cook tomorrow!
