A new challenge in the kitchen

Will decided to listen to our friend and doctor Sven Jonsson and became a vegetarian for a month since a week ago today.  It's been fun to cook for him.  And of courese challenging too.  I like a good clean challenge especially in the cooking department.  I went to visit Lynn and Adrian Cole yesterday.  Adrian being on the same diet as Will gave me a good doze of education on Vegetarian cooking without oil, milk, milk product.  I am relearning how to shop.  It's all a great fun.  I had made collard green soup, 3 beans soup, tortia soup, salad, Lentil soup etc.  One of the things I made so far was a creative fun coulourful Spinach salad.  I made it last night. It has fresh Spinach leaves, fresh strawberries and frozen blue berries.  For the dressing, diluded a fine quality ballsamic vinegar with water.  He loved it.  I think I will make it again.
